This is what else you need to make your Pathia Curry Spice Kit!

Choose your main ingredient from: 500g–750g diced chicken, vegetables, paneer or seafood, 5 green chillies, 4 garlic cloves, 2 onions, chopped, 3 tbsp oil, 400g tinned chopped tomatoes, 2 tbsp tomato puree, 2 tsp dark brown sugar, handful of coriander leaves, chopped, 1 tsp salt, 180ml water, juice of ½ a lemon

The instructions:

  1. Grind the green chillies and garlic cloves in a blender with a little water to form a paste.
  2. Gently fry the onions with the oil in a pan over a medium heat until softened but not coloured.
  3. Stir in the chilli and garlic paste from Step 1. Add the contents of the Spice Bag and fry for 2 minutes. Add the chopped tomatoes and tomato puree and fry for 5 minutes, stirring occasionally.
  4. Combine the sugar, the coriander leaves and 1 tsp salt together with the water into the pan. Bring to the boil and add your chosen main ingredient. Continue to cook until all the ingredients are cooked through. Squeeze the lemon juice into the sauce and serve.
