Chettinad curry is a classic Indian recipe that comes from the region of Chettinad in India. If you like spicy dishes then this one is definitely for you. It is one of the most flavourful dishes from South Indian cuisine.  Chettinad goes perfectly with Dosa and it tastes very good with Parathas or boiled rice.

This Chettinad curry spice kit provides a light fragrant dish with layers of moderately spicy flavours

This is what else you need to make your  Chettinad Curry spice kit

Choose your main ingredient from: 500g–750g diced chicken, or vegetables, 3 tbsp oil, 2 medium onions, finely chopped, 3 garlic cloves, finely chopped, 20g ginger, finely chopped, 2 green chillies, chopped, 4 large tomatoes, roughly chopped, tsp salt, 2 tsp honey, 125ml stock

The instructions:

  1. Heat the oil and add the contents of Spice Bag A to the pan and fry for 1 minute then add the onions and fry gently until the onions are softened.
  2. Blend the garlic and ginger with a little water to make a paste and add to the pan with the chillies.
  3. Add the chicken or vegetables, chopped tomatoes and the contents of Spice Bag B, salt and stir it together to combine and then add the honey.
  4. Fry for 10 minutes and then add the stock and simmer for 20 minutes until the sauce has thickened and the ingredients are cooked. Remove the whole spices and serve.
