Ras El Hanout is a blend of spices which varies from region to region. Often used to flavour Tagines In Morocco and Tunisia. Originally, spice blenders would create heir own speciality blend. Ras El Hanout is believed to be a mix of their very best spices.
This is an easy, healthy recipe and ready in no time and here is how!
Make the paste for your Garlic and Lemon Moroccan Chicken:
Using 2 tsp Salt, 2 tsp Ras El Hanout Spice blend, 4 tbsp Olive Oil, 2 cloves of garlic (grated), Zest of one lemon mix to a paste.
Take 1kg of boneless chicken (small pieces or cubes), coat with the paste and marinade for a few hours or overnight. (We find it easier to use a sealed food bag and massage the chicken and paste together).
Grill the chicken to create the ‘charred’ effect and either continue until the chicken is cooked through or place in a pre-heated oven to complete the cooking.
BBQ turning the chicken pieces until thoroughly cooked or create Kebabs using dampened wooden skewers.
Squeeze the remaining lemon, sprinkle with fresh mint and/or parsley and season.
