Ham & Bean Casserole, a comforting dish
Making this beautiful comforting slow cooked ham & bean casserole couldn’t be easier! it is versatile and family friendly and is a really cost effective and you can use varied ingredients to suit both the season and also the leftovers in your fridge. It can be easily transformed into a vegan or vegetarian dish, take care of the stock used, omit the ham and if preferred, add alternative protein or vegetable of choice. This dish can be served simply with bread but consider rice, couscous or even pitta bread.
So easy Cooking instruction!
If you are using dried beans, soak and prepare as per the instructions on the packs prior to cooking! We use assorted tinned beans in brine that just need to be rinsed before cooking but use less stock
*Add the following to your slow cooker:
1 tin of chopped tomatoes, 2 cups of dried/prepared beans), 200 g Cubed, cooked ham, 2 x carrots chopped, 1 x stick of celery chopped, 1 large cubed potato, 1 medium onion chopped, 2 garlic cloves chopped, 2 teaspoons Herbes de Provence, 1/2 tsp salt, 1 tsp pepper, 400ml stock.
Set on Low heat for 6 hours.
