Bean Chilli – Easter Special!

Perfect Bean Chilli for any diet!

We are excited to be trying the Plant Based Flexitarian diet that we are trying.

This Three Bean Chilli can be quickly prepared before adding it to the slow cooker, making a super option for a busy day and an easy healthy evening meal and as we personally know, a great lunch warmed and served with some soda bread.

Ingredients/Method:

Chop 1 x onion and fry until brown.

Add: 

1 x chopped chilli.

2 x Garlic cloves sliced.

1 x teaspoon of cumin, 1 x teaspoon of cayenne

1 x tin of chopped tomatoes

2 x vegetable stock pots/cubes

1 x tablespoon tomato puree

A tin of Baked beans in tomato sauce

Rinsed tin of Kidney beans and Cannellini beans. (you can add the beans of your choice)

Transfer to the slow – cooker, set to low,

Break up 25g of dark chocolate because this will enhance the chilli flavour.

Add to the slow cooker, close the lid, and allow to simmer until ready to serve.

Options for you to try with your Bean Chilli!

We served ours with our favourite rice, you might like to add some sour crème or crème fresh and season to taste. For work the next day we had the chilli, for this we warmed the chilli and ate it with Soda bread (Homemade of course!), It made for a very tasty, healthy, and affordable meal over two days.

Other things you can serve with your chilli are ‘corn chips’, bread and crackers, taco’s, pasta, cheese and anything else you might fancy or that is suitable for your chosen diet.

We love a hot bowl of chilli over some rice with some sour crème and some nachos with a cold glass of something, depending on what time of day it is!
